So I decided a while ago that I wanted to start making my own heathy snacks to replace packaged foods. This is one of my endeavors to get rid of foods with preservatives and incorporate more whole grains and seeds into mine and my kiddos diets. I have been loving granola bars lately and there is a homemade one at a coffee shop that I go to that is SO good so I was inspired to find my own recipe. I stumbled upon the blog Well Plated and found some great recipes, particularly a healthy Chia Granola Bar recipe that I modified. I love that these are a no bake recipe that can be kept in the freezer. Also, they were very easy to make as well as modify. I doubled the recipe because I’ve been super busy lately and want to have some snacks on hand, but here is a breakdown of what I included in mine:
1 1/3 cup creamy organic peanut butter
2/3 cup raw honey
3 cups rolled oats
1/2 cup organic black chia seeds
1/2 cup organic millet
1/2 cup organic dried coconut
1/2 cup mini semisweet chocolate chips
1 cup raw organic chopped walnuts
To make, just mix all of the ingredients together and then spread the mixture into a pan and pop in the freezer. I cut mine into small 1″x 1″ squares so they are more like bar cookies.
The recipe is DELICIOUS and I love the combination that I made, however the possibilities are endless. Maybe next time I’ll try almond butter or some dried fruit for a different variety. The millet was the only ingredient that was completely new to me but I love it. It gives a great much needed crunch. These are definitely kiddo friendly and will give me lots of energy when I need something to snack on to keep up with these TWO kiddos 🙂
